Kale Crispies

Have you ever tasted kale? Have you ever tasted a Kale Chip??

Let me tell you kale is a staple in my household…..it is super yummy and yes, my kids LOVE it!!!

They will eat plain kale but their absolute favorite is kale salad.

I love kale salad but my absolute favorite are Kale Chips!

Crispy, salty, melt in your mouth health food!!

Kale chips are super easy to make too, I am going to show you how to make a cheezy salt and vinegar tasting kale chip but really there are so many different varieties that can be made!  I am working on a BBQ recipe along with a few others and hopefully I will post about those soon!!

Kale Crispies

1 bunch organic kale, de stemmed and washed, then cut into shredds

2 tbsp. olive oil

1 tbsp. apple cider vinegar

1-2 teaspoons sea salt

2 tbsp. nutritional yeast

Place kale pieces in a bowl.  Add olive oil and salt and massage into leaves.  Add in vinegar and nutritional yeast and toss until well coated.  Place on a cookie sheet and place in oven set at the lowest temperature. My oven goes to 170 degrees and I bake them until crispy.  The kale needs to crisp up slowly so it does not burn, so watch them carefully!

We did the same thing with the rainbow fruit leather.

strange addiction, I know…

this is my garden kale….

I had the opportunity to also try out some of Brad’s Raw Kale chips

I was sent a box filled with some yummy looking goodies!!

included was the Naked kale chips….

and the Vampire Killer Kale Chips

and I also received

Brad’s Red Bell Pepper Chips

I was so excited to tear open these snacks that I almost forgot to take pictures!!

Look at these kale chips!!

I started eating these and suddenly turned into what could only be described as The Cookie Monster way of eating….

I had kale crumbles falling onto my shirt…..

kale pieces stuck in my teeth…..

I believe some may or may not have flown up into my hair…

I had to sweep and mop my kitchen floor once the cookie monster madness had ended-

but it was all worth it!!

If you have never tried kale chips-please do not judge me…..

and if you have tried kale chips before-you know you have a closet addiction too! 🙂

Speaking of my closet….there may still be crumbs in there….

I almost forgot to mention the delicious red bell pepper crackers too….

they went quite well with my smashed whole half avocado…

My Garden!

I had high hopes for my garden this year…

but I ran into some troubles along the way.

Let me explain….

I decided that I was going to buy organic seeds and start my plants inside….

Then I bought some seed containers and organic soil.

and then the kids and I got busy planting…

Once the little seeds sprouted I started to take them outside during the day to soak up some sun…I was so proud of those little sprouts!!

Then one evening I just forgot to bring them in and that night the temps dropped pretty low and the next day when I remembered they were out there and checked they were limp and lifeless…..:(

Oh -I still had hopes of them surviving…so I babied them and tried to nurse them back to life….but in the end I had no such luck…..my little plants could not be revived.

I had some seeds left from each pack and I decided I would plant directly in the ground even though by this time it was June!

I had also found some organic veggie plants at a local store and planted those.

We watered, watched and waited patiently……

and now look at what we have!!!

Our tomato plants!!!

I have my eye on this one…..

We have a variety of peppers growing!!

This spicy pepper will end up in my homemade salsa!!!

I planted lots of kale for my families kale salad addiction…but it looks like we aren’t the only ones that like kale….not sure what is sneaking bites of my kale.

Rainbow Chard!!!

I have a whole row of pretty romaine leaves!!!

I have 1 corn stalk that grew….I don’t know what happened to the other 5 that I planted!!!

My cucumber plant is thriving and we even have some cukes already!!

This one will probably end up in my salad!!!

Let me take this opportunity to introduce you to my zucchini plant….his name is BOB….

he is trying to take over our garden…

he is almost as big as my children!!

I am certain that Bob will provide us with many zucchini’s this summer!!

We also have a Mulberry tree in our backyard…

I have a love/hate relationship with it though….the berries are great but my yard is filled with fallen ripe berries….which makes for a HUGE mess!

We also get plenty of weeds in our yard…but did you know that many of them are edible??

My kids favorite of all time is called Wood Sorrel…it looks like this!

This weed tastes like lemonade…my kids pick it all the time!!

How I get my kids to eat Kale!!!

I love kale and so do my kids.

We grow it in the summer in our garden.

We buy it every time we go to the grocery store.

I would say that kale is a staple in our house.

My kids and I love to make kale salad and we also love to dehydrate our kale into crispy kale chips.  Kale is a wonderful green that is filled with vitamins and minerals.  Just 1 cup has loads of Vitamin K, Vitamin A, Vitamin C, Vitamin E, Maganese, Calcium, Potassium, and iron just to name a few!!!

I love to use kale in my smoothies and juices, but another great way to eat kale is to make a kale salad!

We make a dressing out of apple cider vinegar, Extra virgin olive oil, sea salt, nutritional yeast, and dulse.  We never measure our ingredients-we just add ingredients and taste test until it is to our liking!!

We use tongs to mix it all up!!!

MMMMMMM………so good!!!!!

Even though we never measure when we make this favorite lunchtime salad-I forced myself to write out measurements for my latest Ebook where this recipe is featured!!

Sometimes….not often we have some left over and we place it into our dehydrator to make kale chips!!!

Then we can take our kale everywhere!!!

Kale lemonade for mom!!!!!  MMMMMMM…..love it~~~

Kale Salad and Vanana Ice Cream Sundaes!


This dark leafy green has found a special place in our hearts lately-my kids have been asking for this almost daily!    My 3 year old son even asked if we could have this at his birthday party!!  A kale themed party, huh???  Not sure how well that will go over with the other preschoolers in attendance, but we can surely add it to the mix of food options!

I love to add kale into my smoothies and we grow kale in our garden every summer.  My two little kale monsters love to tear off pieces and eat it while they play…I constantly have to remind them to check each piece carefully before shoveling it into their little mouths.  The thought of a hidden insect or bird dropping is not pleasant!!

Lately though, we have been devouring “kale salad” which has turned into quite a delicious lunch ritual!


Here is a shot of my little kale monsters !!!

We love to eat our kale salad with watermelon!!  It is a wonderful lunch!!

Colorful too!!

On this day, we also had some frozen bananas leftover and decided to make Vanana Ice Cream sundaes!!!

This is just heavenly!!!  This one is mine….ice cream made from bananas and vanilla topped with fresh blueberries, strawberries, vegan chocolate chips,and some almond butter!

I could eat this all day!

My kids thoroughly enjoyed this treat too!

I can’t think of a tastier lunch, plus it was packed full of vitamins and minerals!!!

Kids were happy and mom was happy!!!
