Vegetarian Chili


Apple Orchards, bonfires, cute boots, and cozy sweatshirts…….

Brightly colored leaves changing hues in the cool days……doesn’t it just scream Chili time?

I think it does…..and I think you should try this recipe!

Vegetarian Chili

1 -28 oz. can of organic tomatoes in tomato juice

1 -28 oz. can of organic fire roasted tomatoes

1 -can of organic black beans (drained and rinsed)

2 red peppers or a mix of red, yellow, orange and green

1 small yellow onion

2 cloves garlic

2 tbsp. chia seeds

1 tbsp. chili powder

1 tbsp. cocoa powder

1 tsp. sea salt

1 tsp. garlic powder

1 tsp. dulse

1 tbsp. olive oil

optional: red pepper flakes to taste

Dice onions, peppers and garlic and place in heated skillet with olive oil.  Add in salt, chili powder, garlic powder, dulse, and cocoa powder.  Saute several minutes and then add in canned tomatoes and chia seeds.  ***My kids do not like tomato chunks in their chili, so I food process the tomatoes before I add them in so it is a non chunky sauce, this is optional****

Cook on medium heat for 20 minutes. Serve with some homemade garlic bread, or top with homemade croutons.

The kids even popped their heads out of their favorite new toy to see what the wonderful smell was!!!
