Papayas!!! These exotic fruits are very sweet, especially if they are really ripe!! When you open one of these up they are orange with yellow or pink hues surrounding black seeds that are encased in a gel like substance. To eat, just scoop these seeds out and cut the brightly colored flesh into a bowl. These fruits are so rich in antioxidants, Vitamin B, Vitamin C, Folate, Fiber, Potassium, and Magnesium. Papayas are very high in Lycopene about 3,000 ug in one large slice. They are also a great source of Proteolytic Enzymes and Papain which are both used to aid in digestion. It is effective in digestion because it helps break down proteins and cleans out our digestive tracts. One cup has just 55 calories, 0 fat, 14 carbs, 3 grams of fiber and 1 gram of protein.
What to do with papaya:
- I love to cut it up and put it into plastic bags in my freezer so I can throw them into a smoothie
- Cut into cubes mixed with strawberry halves
1/2 papaya diced
1 package of fresh raspberries
juice of 1 lime
sweetener if desired (agave, honey, stevia)
Place all ingredients into blender and serve with a few fresh raspberries on top!!
Blend in blender or food processor…….Enjoy!!
