This is a 2 part post- the first part is Crazy for Coconuts, so make sure you read both posts together to get all of the information!! So we know that the water in a coconut is very nutritious and healthy-so now I am going to teach you how to make a delicious and refreshing drink using coconut water and lemons! First, I would like to give you some information about lemons- they are high in Vitamin C, B6, Calcium, Potassium, Copper, Thiamin, Iron and Magnesium. Lemons are sour and are acidic, but in our bodies they are an alkaline food which helps to restore the PH levels (Most of us are too acidic). They also have antioxidant properties which fight off free radicals and cancer cells. Something I do often is squeeze 1/2 lemon in a glass of water first thing in the morning (I use the other half to squeeze in my kids water) besides being yummy it is cleansing and helps with water retention. Sometimes, I will add a natural sweetener called Stevia so that it is more like a glass of lemonade. Okay to make this super yummy drink, I use coconut water (either from a fresh coconut if I can or from coconut water that I have purchased from the store-I prefer ZICO brand- here is a link to find a store near you that carries it- http://www.zico.com/search/) . I also use a sweetener called agave nectar which you can easily find in grocery stores in the baking or health section. You could also use maple syrup or honey or Stevia to sweeten this drink. Alright the rest of the ingredients are normal!!!
-Coconut water from 1 fresh coconut or 2 single servings of store bought coconut water
-juice of 2 lemons
-1/4 to 1/2 cup of agave nectar, honey or maple syrup
– 1 tbsp. vanilla extract
– lots of ice
Put all of the ingredients in the blender and blend it up- this is so delicious and makes enough for my family of four-although we often fight to finish each others!!!
