Samantha Gibbs is a mother of 2 beautiful children and has been happily married to her husband for 11 years. Samantha's quest for better health came about 6 years ago when her daughter started eating solid foods. She stumbled upon some information about partially hydrogenated fats. She was stunned to find out this poison was in her daughter's toddler meals and almost every food item that was in her fridge and cupboards. This tidbit of information snowballed as she immersed herself in health books, health magazines, and countless hours of research online. She soon realized her families current diet of frozen meals, fast food, and processed sugars were leading them down a road to sickness and disease.
During Samantha's second pregnancy her husband was diagnosed with Ulcerative Colitis. This pushed her to research any information that linked nutrition and Ulcerative Colitis. She started learning about raw foods or as she likes to describe them as fresh, whole foods. Her family slowly started to change the way they ate and began to see the benefits of adding fresh foods to their diets.
Soon after her son was born, it became apparent that he had a skin condition known as eczema. They also soon discovered he had severe food allergies to dairy, eggs, and nuts. When her son was only 10 months old her husband became so sick with a flair from Ulcerative Colitis that he had lost 50 pounds and was hospitalized for a week. Shortly after that her son was diagnosed with asthma and was also hospitalized because of having such a severe attack. "At this point I didn't have a choice anymore," says Samantha "I had to feed my family healthier just to keep them alive." She knew she didn't want to feed her family obvious poisons such as partially hydrogenated oils, MSG, and food dyes, but she also couldn't feed them dairy, nuts or eggs either. "My options became very slim. Walking through the aisles of the grocery store reading every label was such a daunting task. Everything I picked up had one of those ingredients in it."
Even though she had made some drastic changes over the last few years like becoming a vegetarian and getting rid of their microwave, she knew she needed to do more. Samantha truly believes that the best nutrition is one that is based on unprocessed whole foods. She currently feeds her family a high raw diet that contains mostly of uncooked fruits and veggies. She is passionate about sharing her story and helping other families learn how to eat unprocessed in a processed world. She founded Color Wheel Meals on these principles and hopes to extend her passion for healthy food to others.
