I love granola but it is pretty expensive to buy the good stuff, so I have been making my own! It is super easy and a great way to get your kids involved in helping in the kitchen!
I have been experimenting with different flavors and the Coconut Blueberry is one of my favorites!
Coconut Blueberry Granola
3 cups organic oats
1/3 cup of raw organic honey (maple syrup could be used also)
1/2 cup dried organic blueberries
1/2 cup organic coconut oil (melted but not hot)
1 cup shredded unsweetened coconut flakes
OPTIONAL INGREDIENT: 1/2 cup freeze dried blueberries and pineapples that have been ground into a powder (the recipe will still work without this ingredient-it just gives it a more delicious blueberry richness)
Preheat oven to 220 degrees. Place oats and coconut flakes in a large bowl and toss well. Add in ground freeze dried bluebrries/pineapple. Add in honey and coconut oil and toss until oats and coconut are well coated. Fold in dried blueberries. Transfer to a baking sheet. Place in oven and bake for 1 hour, checking every 15-20 minutes and stirring the granola mixture to cook evenly. Granola will not get crunchy and hard until it has cooled. Once cooled store in an airtight container.
Eat it with almond milk and fresh blueberries……
or straight out of the jar as a snack…..

Sounds yummy! Where did you purchase the freeze-dried blueberries and pineapples? I have dried, whole pieces, but not freeze-dried. My daughter is begging for it LOL!
Trader Joe’s has the freeze dried ones!! IT works without using that ingredient though!
