I have never been a part of any kind of blog challenge or any food challenge for that matter but for some reason when I seen the Raw Ice Cream Sandwich Challenge that Lisa and Nicole put together it got me thinking…….
and I decided to give it a try!
First, I asked for opinions on my facebook page:

I decided to try making the two top voted ones:
Chocolate Chip Cookie Dough Ice Cream Sandwich and
Chocolate Almond Butter Ice Cream Sandwich
I am excited to share my results with you!!!
First, I got started on the Chocolate Almond Butter Ice Cream Sandwiches…I wanted this recipe to be reminiscent of a chocolate and peanut butter ice cream that I used to LOVE as a kid!
I started with some almonds and cashews
and ground them up in my food processor…
and used a cookie cutter to make fun shapes…I put these in the freezer to firm up while I got busy on the ice cream!!
For the almond butter ice cream I used cashews, sea salt, vanilla, water, agave, almond butter, and coconut oil….here is what it looked like before I froze itI placed it in the freezer to get cold and then used my ice cream maker to harden it.
Then I started to assemble the sandwiches!!
I rolled 1/2 of them in cacao nibs…
Chocolate Almond Butter Ice Cream Sandwiches
Chocolate Sandwich Cookie
1 cup raw almonds
1 cup raw cashews
1/2 cup cacao powder
1/3 cup agave
vanilla seeds from a vanilla bean
1/4 tsp. salt
OPTIONAL: 1/2 cup cacao nibs
Blend cashews and almonds together in food processor to make a fine powder. Add in other ingredients and process until a dough ball forms. Chill for 15 minutes. Roll out to desired thickness and use cookie cutters to cut out shapes. Place on waxed paper and chill until ready to use.
Almond Butter Ice Cream
1 cup of raw cashews
1 cup water
1/2 cup agave
4 tbsp. almond butter
2 tbsp. melted coconut oil
1 tsp. vanilla
1/4 tsp. sea salt
Blend cashews and water until creamy. Add in other ingredients and process until smooth. Set in freezer until chilled and then process in ice cream maker or continue to freeze in freezer stirring occasionally.
Once ice cream is ready place a scoop onto one sandwich piece and top with another sandwich piece. Roll in cacao nibs. Freeze until ready to serve!
These were great….ENJOY!!
My second recipe actually turned out AMAZING!!!!!!!!

Chocolate Chip Cookie Dough Ice Cream Sandwiches!!!
First, I started with the dough…
finally I folded in some cacao nibs…
Next I took some of this dough and made small little cookie dough balls…
I rolled out the rest of the dough and cut out cookie shapes and placed them into the fridge to chill while I worked on the ice cream….
once the ice cream was ready
I added in the cookie dough balls
Next I rolled out the rest of the cookie dough and used my cookie cutters to make the sandwich pieces…and then I assembled!!
Place some ice cream
Chocolate Chip Cookie Dough Ice Cream Sandwich
Cookie Dough
2 cups raw cashews
1/4 cup coconut nectar
1 tsp. vanilla
1/4 cup melted coconut oil
3 tbsp. cacao nibs
Process cashews in blender until finely ground. Add in remainder of ingredients except the cacao nibs. Process until dough forms. Fold in cacao nibs. Use a small portion of dough to form small ball pieces. Use the rest of the dough to roll out and use with a cookie cutter to form the sandwich tops/bottoms. Chill the dough balls and sandwich tops/bottoms until ready to use.
Cookie Dough Ice Cream
1 cup raw cashews
1 cup water
1/2 cup maple syrup
1/2 cup melted coconut oil
pinch of sea salt
1 tsp. vanilla
Blend cashews and water until creamy. Add in other ingredients and process until smooth. Set in freezer until chilled and then process in ice cream maker or continue to freeze in freezer stirring occasionally. Add in rolled cookie dough balls.
To assemble:
Place a scoop of ice cream onto cut out cookie dough and add the top!! Freeze until ready to serve!!!
These were so yummy!!!!
All in all both recipes were a success but my favorite was the cookie dough ice cream sandwich!!!

Your cookie dough recipe was pretty much the 1st time I tried making something more complex than peanut butter and jam sandwiches. Somehow I managed to mess up my whole kitchen and fill up the dishwasher. Mine also look pretty horrible. Ugh, such a newbie.
